Gluten-Free Pizza

A tasty gluten-free pizza with sauce and cheese.

Ingredients
  

  • 1 gluten-free dough (dough of choice or homemade from scratch)
  • 1/2 cup red sauce
  • mozzarella cheese (to your liking)

Instructions
 

  • Take pizza dough out of fridge an hour prior to cooking in order to let it come to room temperature.
  • Place stone in the oven
  • Turn oven on max temperature
  • Turn oven on convection
  • Place dough on flat surface that’s been lined with some flour
  • Stretch the dough by hand or with a pie pin. the downside to gluten free dough is that you can’t get the cornicione to automatically form. The cornicione is the edge or lip of a pizza. aka the crust.  you can manually create one by curling up the edges after the dough has been fully stretched. dough should be about 7 or so inches at this point. 
  • Flip dough over and stretch it out again. again, form the crust. the dough should be closer to 10 inches in diameter now
  • Add sauce.
  • Add cheese
  • Add fresh basil
  • Drizzle olive oil over the top
  • Place on the pizza stone until cooked. the starches in the gluten free dough mixture take longer to cook, especially in an oven rather than in a wood burning stove. cook for 15 minutes or so, give or take.
